Filipinos are very happy and proud for the victory of Manny Pacquiao.  Manny Pacquiaio retained his WBO welterweight title by knocking down Mosley in the boxing championship fight last week in MGM Grand Garden in Las Vegas. It was a good fight.  Manny got hard time knocking down Mosley but still he did in the third round and dominated the fight until in the 12 round. Pacquiao landed exactly 100 more punches than Mosley did as what judges said. The scores by unanimous decision were: 119-108, 120-108 and 120-107.  It is now Manny Pacquiao’s 14 consecutive winning.  Mosley was a great fighter too and was so sports.  Thank you for bringing pride and honor to the country, Manny! You are winner.</p>

I have been back &#8216;early&#8217; from my 4-month long vacation where a lot of memorable and important things happened, and some I missed. But I came back different because of the life changing experiences I had. Life indeed is very beautiful and full of excitement and inspiration I could only sigh. It feels so great to have wonderful people to spend our happy memories with; I will be forever grateful.</p>
<p>It was a Saturday and we had a plan but one member got sick so it was canceled so I ended up going to my aunt&#8217;s for her birthday party, which I was glad I had. They are living in a secluded and far place and we had to go to the terminal to meet up with other friends. While waiting for others, I was just sitting on one of the neat benches in Tagum public terminal absorbing the everyday scene as I knew I would miss it one day. There was a little girl who passed by me, I smiled to her, she smiled and went back her way and from what I saw in the distance, she was telling her playmates something about me. I was amused because I know why and what was it about. Secret.. I think it was cute, they came to me and well, I had my camera so I took their photo. What a joy they had when they saw their pictures. It was a beautiful day spent for a while with the hard-working funny little girls in the public market. I wish they will grow successful and happy in life, and you who is reading this.</p>

It is also for the effort it to be the music capital in the Philippines. The festival run for several days, featuring students all over the city that are all musically talented, and the nationally award-winning musicians. It’s all about music, baby.<br />

<p>Roasted pig is a staple food in the Philippines. It is our &#8220;party food&#8221; as crawfish boil is for Louisiana. But I love roasted pig so much as do hubby. Since it is our specialty, of course we have something specially made for roasted pig, a lechon (roasted pig) tray to lay the crispy yummy roasted pig on. We were not expecting though that these kids would be carrying it from an aunt&#8217;s house two hundred meters away down the road. The tray has a special handle and of course, it is formed like a pig.</p>

This is a bush of what we locally call “sili” or hot pepper. They are relatively small in size but they are much stronger than the bigger ones. Used in the Philippines as spice and or added in a ‘sawsawan’ or a sauce for an extra hot taste, sili is also used to make a baby who does not follow simple instructions to stop sucking its fingers when its about time by dubbing an amount to its thumb <img src='http://ladygishi.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':-D' class='wp-smiley' /> . You will never hear of it again.</p>

In 2006 it was the highest Christmas tree nationwide, but last year it was divided into two equal lengths, the other half was giving lights to the people around the public market. They were tremendous. This year they are just fabulous with all the other Christmas lights and displays, they are very entertaining and &#8216;joy-giving&#8217;. May yours is full.</p>

To be most crunchy, crispy and yummy, it has to be slowly cooked over a fire for several hours to a day. The pig is completely cleaned and its internal organs are removed for another menus or whatever way one wants to cook them. Inside the pork for roasting are several spices and seasoning for greater taste, especially lemon grass that removes any pungent meat smell and makes it fragrant. The roasted pork/meat is very tender and the skin is very crispy the food is very delicious. It is best served with ketchup or any sauce.</p>
<p>I missed lechon so much, so it will just wait till I go home! </p>

<p>I arrived in Manila from the US late at night during my last vacation, but I decided to just stay in the airport since there are many people there also. I would not spend a penny for a hotel because I was so tired, I might miss my early morning flight. I was just so anxious to arrive home after all the longs hours of flying. Inside the airport, I saw a cat! One of the airport guards said that she is a resident there. That was so funny seeing her running around the corners, and also because I just lost my cat that time, Lady Gishi that I was supposed to bring along with me to the Philippines. Seeing that cat made me smile, I was really amused. Cats are really something, aren&#8217;t they?</p>
