Roasted pig, or lechon, is a staple food in the Philippines especially during celebrations, gatherings and big events. There are so many “lechonhouses” in the malls and almost in every streets that is it readily available if you don’t roast your own. To be most crunchy, crispy and yummy, it has to be slowly cooked over a fire for several hours to a day. The pig is completely cleaned and its internal organs are removed for another menus or whatever way one wants to cook them. Inside the pork for roasting are several spices and seasoning for greater taste, especially lemon grass that removes any pungent meat smell and makes it fragrant. The roasted pork/meat is very tender and the skin is very crispy the food is very delicious. It is best served with ketchup or any sauce.
I missed lechon so much, so it will just wait till I go home!

I arrived in Manila from the US late at night during my last vacation, but I decided to just stay in the airport since there are many people there also. I would not spend a penny for a hotel because I was so tired, I might miss my early morning flight. I was just so anxious to arrive home after all the longs hours of flying. Inside the airport, I saw a cat! One of the airport guards said that she is a resident there. That was so funny seeing her running around the corners, and also because I just lost my cat that time, Lady Gishi that I was supposed to bring along with me to the Philippines. Seeing that cat made me smile, I was really amused. Cats are really something, aren’t they?
Frontier trivia of the day:
In Minuteman Airfield in Stow, MA , circa 1978, there was “Airport Cat” called Barclay. What made him unique was that he loved to go flying when in the right “mood”. He would enter through the open pilots door and made himself at home atop the instrument panel. He flew many times giving pilots’ ‘company’. (http://www.videointerchange.com/cats.htm)
I witnessed one of the Harvest festivals. There are a lot people witnessing and some of them are participants. In the midst of the crowd this little calm girl caught my attention. Despite the heat, noise and chaos she remained calm and patiently waiting for their turn to perform. Hope we are like that girl when we are in the midst of trouble or problems, we still remain calm. happy WW everyone.
My itinerary follows the Davao-Singapore-Mumbai and back route and in my return I have 30 minute allowance to make it on the second leg. Granted the flight will not be delayed from Mumbai on midnight, there is a chance but I would have to run in the big airport in Singapore. But today, four days before my flight I changed that, and glad that the travel agency was cooperating. I may stay for several hours in Singapore, but it gives me plenty of time to make it to the next flight heading home, Davao.
This is the church building I designed that we have been constructing. It is not yet finished. Hubby has contributed so much for the realization of the construction. We are looking for supporters that want to build in a strong foundation.
We went to Davao, my sisters, cousin and my uncle for some business, and we just stopped in the sidewalk to eat my missed fruit – Durian. Let’s eat!
